Dried pasta is made almost entirely from durum wheat, milled into semolina, so its price ultimately rests on the wheat market. Durum is a specialized, smaller crop than the wheat used for bread — grown in a few northern states and abroad — which can make its price swing more sharply than common wheat. As with most boxed staples, milling, packaging, and shipping also make up a large share of the shelf price.
