Most U.S. eggs come from large flocks of laying hens, and outbreaks of highly pathogenic avian influenza (bird flu) force entire flocks to be culled, removing millions of layers within weeks. Rebuilding a flock to laying age takes months, so a single outbreak can keep prices elevated long after it is contained. Between shocks, the cost of feed grain — corn and soybean meal — is the main influence on what a dozen eggs costs.
